1 tablespoon minced fresh cilantro or 1 teaspoon ground coriander
2 teaspoons minced garlic
1/2 teaspoon ground black pepper
1/4 teaspoon coarse salt
Whisk in:
2 tablespoons peanut oil
1 tablespoon toasted sesame oil
Pour the marinade into a wide, shallow pan. Add and turn to coat evenly:
2 racks pork baby back ribs, halved
Marinate for at least 45 minutes at room temperature.
Meanwhile, preheat the oven to 400┬░F.
Lay the ribs out on baking sheets. Bake until still slightly pink, about 30 minutes.
Prepare a medium-hot charcoal fire or preheat the broiler.
Grill or broil the ribs until they are deep brown and glazed, about 3 minutes each side. Baste with the marinade, cut into individual riblets, and serve hot.
